Line Cook

 

Reports To: Chef/Sous Chef

 

Overview

 

Line cooks will maintain a clean and sanitary environment by adhering to all food safety regulations. Completes all incoming orders in a safe and timely manner. Utilize knives, slicers, and cooking equipment in a safe manner at all times. Cook, cool, and store food in a safe and sanitary manner at all times. Prepares quality food consistently in the proper sequence. 

 

Responsibilities and Duties

 

  • Present proper personal hygiene. Clean body and proper, clean uniform. 

  • Set up and prepare kitchen area for upcoming shift. 

  • Steam, grill, boil, bake, sauté, portion, or fry food items.  Prepare cold food items.

  • Properly cook food orders in the proper sequence while communicating with cooks. 

  • Maintain the highest standards of cleanliness and proper sanitation at all times. 

  • Follow recipes by measuring ingredients, seasonings, and following described cooking methods. 

  • Demonstrate consistent knowledge of Cross Contamination and Cross Contact during all aspects of food preparation,
    storage, and serving. 

  • Consistently monitor Time / Temperature aspects of food prep, cooling, and storage. 

  • Demonstrate proper hand washing techniques along with the proper knowledge on when washing hands is required.

  • Demonstrate proper hand glove requirements. 

  • Demonstrate proper cooling / reheating methods. 

  • Maintains / Documents proper temperatures for all hot and cold holding of food items. 

  • Cover, label, and date all food products. Demonstrates proper storage of foods. 

  • Perform all side work including cleaning, restocking, and setting up the kitchen area.

  • Properly clocking in and out utilizing the POS system. 

 

Qualifications

 

  • Valid, up to date Servsafe Certification. 

  • Proven experience as a line cook. 

  • Manual dexterity able to operate cutting tools, kitchen utensils, and equipment. 

  • Ability to read and understand the incoming food tickets. 

  • Delegating and coordinate tasks to appropriate stations in accordance with incoming orders. 

  • Team player with good communication skills. 

  • Patient with the ability to stay positive under pressure. 

  • Good Physical condition with endurance to work long shifts.

  • Physical abilities:

Able to be on your feet for hours. 

Able to lift from 20 pounds to 100 pounds. 

Requires the ability to bend, stoop, squat, kneel, lift and turn large items and work quickly by moving easily through a busy environment.
